Brown Sugar & Nut Corn Muffins

Yield: 
24 muffins

Ingredients

1-1/2 cup brown sugar
2/3 cup oil
1 egg
1 cup buttermilk
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
2-1/2 cups flour
1-1/2 cups Mirai sweet corn
1 cup chopped nuts (half for muffins, half for topping )
1/3 cup sugar (for topping)
1-1/2 teaspoon flour (for topping)
1 tablespoon melted butter (for topping)
Directions: 

Preheat oven to 400ºF

Beat the egg, then stir in the buttermilk, sweet corn, oil, and vanilla. Stir the brown sugar, flour, baking soda, and 1/2 cup of the chopped nuts. Fill paper-lined muffin tins to 2/3 full.

Mix together topping ingredients — 1/2 cup of chopped nuts, sugar, 1-1/2 teaspoon flour, and melted butter. Sprinkle over muffins.

Bake for 20 to 25 minutes or until done.
