Preheat oven to 400ºF
Beat the egg, then stir in the buttermilk, sweet corn, oil, and vanilla. Stir the brown sugar, flour, baking soda, and 1/2 cup of the chopped nuts. Fill paper-lined muffin tins to 2/3 full.
Mix together topping ingredients — 1/2 cup of chopped nuts, sugar, 1-1/2 teaspoon flour, and melted butter. Sprinkle over muffins.
Bake for 20 to 25 minutes or until done.
